As we wrap up Keeneland, we're continuing our "Finish Line" tradition with a sensory-forward pairing of meat, cheese, wine, and whiskey.
We’ll start with Unshackled Chardonnay, perfectly paired with creamy brie. Then, moving into whiskey, we'll enjoy Thomas Moore Chardonnay-finished bourbon alongside soppressata, a spicy, coarse-textured dry-cured sausage from southern Italy.
Next, we’ll explore Madeira, a fortified wine known for its distinctive notes of dried fruits, caramel, and nuts, sourced from Portugal’s islands. This will be paired with Manchego, a nutty and slightly tangy sheep’s milk cheese from Spain, creating a beautiful harmony of flavors.
To close out the Madeira round, we'll savor the Dark Arts 7-year Madeira-finished bourbon, a special barrel pick in collaboration with McCauley Minton, founder of Dark Arts Whiskey House, who will be joining us. This MGP honey barrel spent time finishing in a used Madeira cask before settling at Paddock Bourbon Club (available for $105/bottle). We're pairing this house barrel pick with the salty, delicate flavors of prosciutto, which balances well with both the sweetness & oxidative notes of the Madeira-finished Dark Arts.
